One of my favorite parts of my job is getting in and playing with photos. I like manipulating multiple images to make one masterpiece. There are many tutorials and videos out there on the internet; but to me, there is only one place to go to find tutorials and lessons to help you fine tune and craft your skill. That site is psd tuts +.
Here you can cruise around and choose different tutorials that are easy to follow, with your own photo versions; or sign up to the site for $9/mo and you can have the source files used in the tutorials, PLUS other bonus materials. My goal in life is to complete every tutorial I find cool, and completely up my skills on photoshop.
If photoshop isn't your pleasure, check out their related sites. It seems they have a tutorial site for everything from vector illustration to audio files.
